I am just starting my hangboard program and realized that my board doesn’t have deep enough grips to fit 2 pads on. The largest is about 1.5 - 1.75 pads. There are some in the center, would it work to split up each set with one hand on a time? Should I just use the largest ones I can? Also on some of them there doesn’t seem to be good clearance for the rest of my fingers. Should I just look for a new board? Or are there individual pocket grips I could buy?

I would just use the largest, easiest ones you can and remove weight using a pulley system.
The key thing is not to start your Hangboard cycle at the most weight you can currently hang, but to be hitting that weight maybe in the 5th to 6th session on your first cycle. Slow build up into it.
1.5-1.75 pads is not too bad. I would say that, unless you're having to take off more than 30% of your body weight to complete the repetitions in the first set, it's not a huge deal. If you're taking off 40-50% of bodyweight on the pulley system, then maybe try and find a solution with bigger holds. Dare I say, if you're at that point anyway, might pay to stay off hangboarding for another 3-6 months of 'just climbing' until you can.
