I've been trying a LB that I set. I got to the point where I could cruise with ease all the way up to a single stopper move, that I just can't really get. Now I can't get past the first few moves (mental block). Would it be better if I set a better boulder, that was more powerful, and avoid losing motivation or pulling my hair out?

I think it depends somewhat on where you are as a climber. How long do you spend on outdoor projects, and do those projects generally end in a send?
